a taste of redemption!

I love banana bread, not only because it tastes so delicious, but because it provides a way to use those bananas that have gone "bad" & would otherwise need to be thrown away.

(imagine a picture of my brown bananas here...my "borrowed" internet doesn't work lately unless my compu is practically in my kitchen sink...and still, it won't upload!)

As I was baking some of my favorite chocolate chip banana bread tonight, I thought of how it's a great analogy of the redemption that God works in our lives...He takes what appears to be trash - our struggles & mistakes & brokenness - and He uses it for good.


Megan's Chocolate Chip Banana Bread
  • 1 1/2 cups of flour (I use half whole wheat flour)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup white sugar
  • flaxseed meal (this is optional, but I'd highly recommend it for it's health benefits!)
  • 2 eggs
  • 1/4 cup butter
  • 3 or so bananas (the browner, the better!)
  • chocolate chips (I suppose you could make it sans chocolate if you really wanted to!)
  1. Preheat oven to 350 degrees F.
  2. Grease and flour two 7x3 inch loaf pans.
  3. In bowl, stir together flour/baking soda/salt/sugar/flaxseed.
  4. Mix in eggs (beaten), butter (softened), & bananas (mashed).
  5. Stir in chocolate chips.
  6. Pour into pans.
  7. Bake for 1 hour or until toothpick in center comes out clean.

Serve warm & plain (Megan's preference) or cold with butter (Jenna's preference)...enjoy!
